Calville Rouge Apple

Malus spp. Fall. Auvergne, France, 1670. Also known as Calville Rouge d’Automne or Red Autumn Calville.

Medium to large fruit with the characteristic ribbed shape of Calville Blanc, yet not as flattened. Mainly distinguished by its deep red color and earlier ripening time. Soft juicy coarse-grained flesh is great for fresh eating: subacid, sweet and aromatic with hints of strawberry. But like its Blanc counterpart, Calville Rouge really shines as a culinary apple, holding its shape in pies and tarts, yet melting in your mouth with a smooth and creamy texture. Keep for a month or two.
