Stuffed Patty Pan Recipe
Place an entire patty pan (we used Green Lightning) in pot of salted boiling water, and simmer until squash can be pierced fairly easily. Drain and cool.
Cut off the top of the squash, and carefully scoop out seeds. Stuff with your favorite cooked filling (suggestions below), top with cheese, and bake at 400 ̊ until filling is hot, about 20 minutes.
Fillings are endless! Here are a few of our favorites:
Sautéed mushrooms, spinach, tomato, herbs, garlic and white wine. Top with feta.
Sautéed Italian sausage, peppers, onions and garlic. Top with mozzarella.
Cooked rice mixed with sautéed ground meat, herbs and garlic. Top with cheddar.
Cooked rice with sautéed chicken or chickpeas, golden raisins or diced apple, curry power, cumin, garlic and herbs. After baking, top with plain yogurt.
